Description

These Walnut Apple-Banana Cookies are a great holiday recipe. Simple ingredients, delicious and healthy. Great for the whole family.


Ingredients

  • 2 bananas
  • 1 apple, cored and sliced
  • 1/3 cup almond butter
  • 1/3 cups full fat canned coconut milk
  • 1/3 cup coconut flour
  • 1/3 cup walnuts
  • 1/2 tsp baking soda
  • 1 tbsp cinnamon

Instructions

  1. Preheat oven to 250 F. Line two baking sheets with parchment paper and set aside.
  2. In a mixing bowl, combine coconut flour, baking soda, and cinnamon.
  3. Place walnuts and apple in a food processor, and process until finely diced.
  4. On a separate mixing bowl, smash bananas with a fork until you create a paste consistency. Add in finely diced walnuts and apple, coconut milk and almond butter, and mix well. Pour over bowl with dry ingredients and mix.
  5. Spoon heaping tablespoons of the cookie mixture onto the lined baking sheets, placing them an inch or two apart. Bake for 25 minutes.
  6. Enjoy them right away or store them in a tight lid container for up to 1 week.
