For the Salad
- 4 Persian cucumbers, peeled and sliced
- 1 head butter lettuce
- 1/2 –1 cup cheery tomatoes, halved
- 1 ripe avocado
For the Balsamic Vinaigrette
- 3 tbsp olive oil
- 2 tbsp balsamic vinegar
- 2 garlic cloves, minced
- 1/2 tsp salt
- 1/2 tsp freshly cracked lack pepper
Instructions
- Add all balsamic vinaigrette ingredients to a medium bowl and whisk vigorously to emulsify.
- Add avocado, cucumbers, lettuce and cherry tomatoes (if using) to the bowl with the vinaigrette; toss to combine. Enjoy.
