These Sweet Vanilla Hemp Protein Waffles make for a great post-workout breakfast recipe. Amazing flavor and wonderful nutrition.

- 1 cup tapioca flour
- 1/2 cup Hemp Protein Powder
- 1 tsp baking soda
- 1/4 tsp cinnamon
- 1/4 tsp sea salt
- 1 medium apple, peeled, cored and sliced
- 4 eggs
- 3 tbsp honey
- 2 tbsp melted coconut oil
- 1 1/2 tsp vanilla extract
Instructions
- In a large bowl, mix tapioca flour, protein powder, baking soda, cinnamon and salt. Set aside.
- Add apple slices, eggs, honey, vanilla and coconut oil to a food processor and process until smooth. Pour over bowl with dry ingredients and mix until no lumps remain.
- Cook per waffle maker instructions. Batter should yield 5 waffles, so divide accordingly.
- Serve right away with favorite toppings, or refrigerate for up to 4 days.
