These Sweet Potato Waffles are absolutely fantastic. They are slightly sweet and delightfully nourishing.

Nutrition. One of the most important aspects of fitness. So important in fact, that even though you might run, spin, lift, and train like a maniac you wont get the results you desire unless your diet is locked in.

I speak from personal experience. I used to cycle like crazy; five to six times a week, doing one hour spinning sessions at a time. Sometimes I would even throw in a couple of extra miles in the treadmill for good measure. That’s a whole lot of cardio and a lot of hours spent at the gym.

I was truly in love with spinning. I even got certified, so that I could do it on my own and whenever it was convenient for me. I was a pro…had a crazy pace, great resistance, and always came up with fun little twists to not get bored. Music helped; it always pumped me up and gave me a ton of energy. I only lifted here and there, mainly sticking to cardio and abs.

With all this cardio I was one hungry woman. Since I did so much at the gym, I felt entitled to eat pretty much anything my little heart desired. I never got fat or anything, but I never really could develop that “fitness model physique” I would see in magazines. No matter how hard I cycled and how many abs I did (I did insane amounts of abs circuits), I could never see my body shape up the way I wanted it to.

Little did I now, I actually didn’t need kill myself with all that cardio to achieve my goal. I only came to know this when I started following a trainer program. I was introduced to heavy lifting (combined with moderate cardio), to a wholesome diet, and to clean supplements. Boom. That was the secret.

Now, don’t get discouraged here. This wholesome diet I speak of does not have to be boring or tasteless. In fact, it can be even more delicious than what you are used to. You just have to get creative with the ingredient list you have to work with.

To prove it to you, I’ve come up with the most amazing Sweet Potato Waffles you’ll ever taste….and guess what the main ingredient is? SWEET POTATO. Get busy in the kitchen; you won’t want to miss this.

Description

These Sweet Potato Waffles are sweet and nourishing bites of goodness.


Ingredients

Units Scale
  • 1 medium sweet potato
  • 1 1/2 cups of almond flour
  • 3 tbsp honey
  • 1 tbsp vanilla extract
  • 1/4 tsp salt
  • 1/2 tsp baking soda
  • 1/2 tsp cinnamon
  • 2 eggs

Instructions

  1. Preheat oven to 425 F. Wash, dry and poke holes around your sweet potato. Place it in the oven and bake it until its soft inside, about 30 minutes. Let cool completely, slice it and add it to a food processor along with eggs, vanilla extract and honey; process until smooth.
  2. In a large bowl, mix almond flour, baking soda, salt and cinnamon. Pour in sweet potato mixture, and mix until no lumps remain.
  3. Cook per waffle maker instructions. Batter should yield 6 waffles, so divide accordingly.
  4. Serve right away with favorite toppings, or refrigerate for up to 4 days.

    Hello Mariel… I just saw your post on Facebook about this. I really enjoy sweet potatoes and I use them in my pancakes with a simple recipe after I had them in a restaurant here in San Diego, CA. I boil the sweet potato and then make my paste like you.

    1cup floor (organic)
    1 egg
    2 teaspoons baking powder (I don’t use baking soda)
    baking powder makes the pancakes fluffy
    1cup milk
    1 teaspoon (cane sugar or honey)

  2. hello, i see you mention stevia in the text of the recipe but not in the ingredients. how much sweetner do you recommend? can it be removed from the recipe entirely?

    1. Hi Dana! You are 100% right! I already removed the stevia ingredient from the post. I thought I had corrected that before, but I must’ve missed it! Thanks so much for letting me know :), I really appreciate that. You don’t need stevia at all, RAW honey does the trick perfectly!

    1. Hi KC! No, almond flour would not substitue almond butter. Use almond butter for sure, it is not hard to make and it shouldn’t take you too long to make either 😉

  4. Just made these this morning, and they were so good. I used baking powder instead of baking soda, and used only 1 tsp of honey ( but put some maple syrup on after they were cooked), and they were great. Wonderful way to finish off leftover roasted sweet potatoes.

  5. I used this recipes to make pancakes, I just added almond milk to thin out the mix a little bit, worked pretty well. Love the site, I’ve made a recipe off here everyday for the past few days. They are all great!
