For the meatballs
- 1 lb ground bison
- 2 eggs, whisked
- 2/3 cups almond flour
- 3 green onions, chopped
- 1 tbsp roasted red chili paste
- 1 tsp chopped ginger
- 1 tsp minced garlic
- 1/2 tsp sea salt
- 1/2 tsp black pepper
- Sesame oil, for frying
For the sauce
- 1 tbsp sesame oil
- 1 tbsp rice cooking wine
- 1 tbsp organic maple syrup
- 1 tsp coconut aminos
- 1/2 tsp roasted red chili paste
- 1/4 tsp chili powder
To garnish
- 1 tsp sesame seeds
- 1 green onion, chopped
Instructions
- Preheat oven to 350 F.
- Line baking sheet with parchment paper and set aside.
- In a large mixing bowl, combine meatball ingredients, except the sesame oil. Form 10 meatballs and set on a large plate.
- Place a skillet over medium-high heat and add sesame oil. Once oil is hot, brown meatballs, about 4 minutes each side. Carefully transfer meatballs to baking sheet and bake for 15 minutes.
- While meatballs bake, make the sauce. In a small mixing bowl, whisk all sauce ingredients. Set aside. Remove meatballs from oven, top with sauce, sesame seeds and chopped green onions. Serve right away.
