These Sweet and Spicy Asian Bison Meatballs are delicious and very juicy. They go well with any starch or vegetable side dish. A paleo approved recipe;.


Ingredients

For the meatballs

  • 1 lb ground bison
  • 2 eggs, whisked
  • 2/3 cups almond flour
  • 3 green onions, chopped
  • 1 tbsp roasted red chili paste
  • 1 tsp chopped ginger
  • 1 tsp minced garlic
  • 1/2 tsp sea salt
  • 1/2 tsp black pepper
  • Sesame oil, for frying

For the sauce

  • 1 tbsp sesame oil
  • 1 tbsp rice cooking wine
  • 1 tbsp organic maple syrup
  • 1 tsp coconut aminos
  • 1/2 tsp roasted red chili paste
  • 1/4 tsp chili powder

To garnish

  • 1 tsp sesame seeds
  • 1 green onion, chopped

Instructions

  1. Preheat oven to 350 F.
  2. Line baking sheet with parchment paper and set aside.
  3. In a large mixing bowl, combine meatball ingredients, except the sesame oil. Form 10 meatballs and set on a large plate.
  4. Place a skillet over medium-high heat and add sesame oil. Once oil is hot, brown meatballs, about 4 minutes each side. Carefully transfer meatballs to baking sheet and bake for 15 minutes.
  5. While meatballs bake, make the sauce. In a small mixing bowl, whisk all sauce ingredients. Set aside. Remove meatballs from oven, top with sauce, sesame seeds and chopped green onions. Serve right away.
