These Strawberry Macadamia Nut Paleo Waffles are comfort food at its finest. Nourishing, delicious and easy to make.

- 1 cup roasted and unsalted macadamia nuts
- 3 tbsp + 1 tsp coconut flour
- 3/4 tsp baking soda
- 1/4 tsp sea salt
- 1/2 cup full fat canned coconut milk
- 2 tbsp honey
- 3 eggs
- 3 tbsp coconut oil
- 1/2 tsp vanilla extract
- 1/2 cup Strawberry Rhubarb Sauce (to top waffles)
Instructions
- Make strawberry rhubarb sauce: add rhubarb, strawberries, honey, water, and sea salt to a saucepan and bring to a simmer. Stir occasionally and cook for about 8 minutes, or until rhubarb breaks down; remove from heat and let cool.
- Place all waffle ingredients in a food processor and process until smooth. Cook per waffle maker instructions. Batter should yield 4 waffles, so divide accordingly.
- Serve right away with strawberry rhubarb sauce, or refrigerate for up to 4 days.
