- 1 1/3 cups almond flour
- 3/4 cup unsweetened shredded coconut
- 1 1/2 tsp baking powder
- 1 tsp sea salt
- 8 eggs
- 1/2 cup melted coconut oil
- 1 1/2 tsp apple cider vinegar
- 1 tbsp honey
- Coconut oil spray
Instructions
- Preheat oven to 300 F.
- Grease 1 lb bread pan with coconut oil spray, and set aside.
- Combine almond flour, shredded coconut, baking powder, and salt in a large mixing bowl. Set aside.
- Add eggs to a standing mixer, and mix on low for 2 minutes; stop mixer, add in melted coconut oil, apple cider vinegar, honey, and mix for another minute or so. Add in dry ingredients and mix on low for another 2 minutes, until no lumps remain.
- Pour batter into the bread pan, and bake for 50 minutes or until a toothpick comes out clean when inserted.
- Let cool completely and refrigerate for 2+ hours, as this yields for better slicing.
