Description
This Simple Coconut Bread is savory and has a wonderful coconut flavor. Wonderful for breakfast or for sandwiches for lunch.

- 1/2 cup coconut flour
- 1 tbsp baking powder
- 1 tsp xanthan gum (or ground flax seeds)
- 1/4 sea salt
- 6 large eggs
- 1/3 cup coconut oil, melted
- 1/3 cup unsweetened coconut milk
- Coconut oil spray
Instructions
- Preheat oven to 350 F.
- Grease 1 lb bread pan and set aside.
- Whisk eggs, coconut oil and milk in a large bowl. Mix in coconut flour, baking powder, xanthan gum and sea salt. Pour mixture into greased bread pan and bake for 40 minutes, or until a toothpick comes out clean when inserted.
- Let cool completely and refrigerate for 2+ hours, as this yields for better slicing.
