- 8 medjool dates, pitted
- 1/2 cup unsweetened shredded coconut
Instructions
- Add dates to a food processor and process for 2-3 minutes, or until dates have reached a paste-like texture. Add in 3 tbsp of shredded coconut and process for 1 more minute.
- Add the reminder of the shredded coconut to a small bowl and set aside.
- Grab ⅙ of the date-coconut mixture and roll into a ball; dip it in the shredded coconut and roll it around to cover it completely. Repeat this step until all the date-coconut mixture has been utilized. Enjoy right away or refrigerate for up to 1 week.
