- 1/2 cup pumpkin puree
- 5 large eggs
- 2 large bananas
- 1/2 cup cashew butter
- 1/4 cup coconut oil, melted
- 1/4 cup unsweetened coconut milk (from a carton)
- 1 heaping tablespoon honey
- 1/2 teaspoon vanilla extract
- 1/2cup coconut flour
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1 teaspoon pumpkin pie spice
- 1/4 teaspoon sea salt
Instructions
- Add all wet ingredients (pumpkin puree, eggs, bananas, cashew butter, coconut oil, coconut milk, honey and vanilla extract) to a blender, and blend until all ingredients have broken down and are well combined.
- Add dry ingredients in and blend until incorporated.
- Preheat your waffle maker.
- Once it’s hot and ready to be used, spray coconut oil spray and add your waffle mixture (the recipe yields 6 square waffles, so be sure to divide your mixture accordingly).
- Once your waffle maker beeps and your waffles are ready, remove them from the waffle maker and let them cool for about a minute or two.
- Repeat steps 5-6 until mixture is gone.
- Top with your faves and enjoy.
