These Pumpkin Pie Spice Paleo Waffles will rock your world. I love waffles, and I have tried my share of waffle recipes…so don’t take it lightly when I say these are good.

Have you ever had a bad egg-cracking experience? One where you crack a fresh, organic egg and find something nasty inside? For the crazy amount of times I have cracked eggs in my life, I have never had a bad experience before. Well, not until yesterday.

I was making my husband and I breakfast, so I grabbed a few eggs from the refrigerator and started cracking away on a small bowl, prepping for some yummy omelets. Everything was fine until the very last egg was cracked. Is this grossing you out already? Gosh I bet it is. Who wants to hear about nasty eggs when looking for a delicious recipe? I’m so sorry. But I gotta share it. I gotta talk about it, so that you can avoid this experience in the future. Okay, so I cracked the last egg, and a bloody egg white dripped into my bowl of eggs. It was so sick. Like, really? How does that even happen? How is there blood inside an egg? What? I don’t know enough about the formation of eggs or chickens to understand what went wrong with this particular egg, but holy cow. Eww.

Of course I had to throw away all the eggs I had already cracked in my bowl, because they were already infected by the juices of that bloody egg (so sick). Sad that I wasted all those eggs, but I had to. Can’t be eating weirdnesses.

You know what I’ll be doing from here on out? Always crack my eggs separately. I could either crack them on separate bowls (which would dirty plenty of dishes, especially if I need a bunch of eggs for one recipe), or pre-crack each egg on top of the sink, to be able to assess its status, before fully placing it with the rest of the eggs.  Either solution is simple enough, and it’ll help save the eggs.

Anyway, enough about this nonsense. Let’s talk about this weekend and how exciting it is! A lot of people don’t really like or care about Valentine’s Day, but I absolutely adore that day. It is the day of love! And what’s better than that? A day where you can dedicate showing your love to your significant other and to your best friends…showering them with nice gestures, kind words and acts of service. Yay, I am so excited.

This year my husband wanted to fully plan our Valentine’s Day, so I am just letting him handle it. I think we’ll go to church in the morning (to hear the Word of The biggest Lover out there) and then we’ll just do whatever he has planned. I will let you know how it goes and what the surprise is.

These delicious waffles would be amazing for breakfast or brunch on Valentine’s Day. You can top them off with all things red in order to make them extra festive and special. I did, and they were fab! Topped mine off with raspberries, Mixed Berry Jam and some local honey. Per-fection.

Description

These Pumpkin Pie Spice Paleo Waffles will rock your world. Made with simple, whole ingredients that will have you feeling great all day long.


Ingredients

Units Scale
  • 1/2 cup pumpkin puree
  • 5 large eggs
  • 2 large bananas
  • 1/2 cup cashew butter
  • 1/4 cup coconut oil, melted
  • 1/4 cup unsweetened coconut milk (from a carton)
  • 1 heaping tablespoon honey
  • 1/2 teaspoon vanilla extract
  • 1/2cup coconut flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon pumpkin pie spice
  • 1/4 teaspoon sea salt

Instructions

  1. Add all wet ingredients (pumpkin puree, eggs, bananas, cashew butter, coconut oil, coconut milk, honey and vanilla extract) to a blender, and blend until all ingredients have broken down and are well combined.
  2. Add dry ingredients in and blend until incorporated.
  3. Preheat your waffle maker.
  4. Once it’s hot and ready to be used, spray coconut oil spray and add your waffle mixture (the recipe yields 6 square waffles, so be sure to divide your mixture accordingly).
  5. Once your waffle maker beeps and your waffles are ready, remove them from the waffle maker and let them cool for about a minute or two.
  6. Repeat steps 5-6 until mixture is gone.
  7. Top with your faves and enjoy.
