This easy to make Plantain Cake is a nutritious Latin American treat, that is gluten free & dairy free. It can be enjoyed any time of day.

- 3 plantains, peeled and diced
- 4 eggs
- 1/4 cup unflavored collagen peptides
- 1/4 cup ghee, + 1 tbsp for greasing
- 2 tbsp honey
- 1/2 tsp vanilla extract
- 1 tsp apple cider vinegar
- 1/2 tsp baking soda
- Pinch sea salt
Instructions
- Preheat oven to 350 F. Grease a 9”x9” baking dish and set aside.
- Place all ingredients in a high-speed blender and blend on high until smooth.
- Transfer batter to pre-greased baking dish and bake for 25 minutes. Slice and serve.
