Description

This easy to make Plantain Cake is a nutritious Latin American treat, that is gluten free & dairy free. It can be enjoyed any time of day.


Ingredients

Units Scale
  • 3 plantains, peeled and diced
  • 4 eggs
  • 1/4 cup unflavored collagen peptides
  • 1/4 cup ghee, + 1 tbsp for greasing
  • 2 tbsp honey
  • 1/2 tsp vanilla extract
  • 1 tsp apple cider vinegar
  • 1/2 tsp baking soda
  • Pinch sea salt

Instructions

  1. Preheat oven to 350 F. Grease a 9”x9” baking dish and set aside.
  2. Place all ingredients in a high-speed blender and blend on high until smooth.
  3. Transfer batter to pre-greased baking dish and bake for 25 minutes. Slice and serve.
