Description
This Paleo Waffle BLT is the only BLT you’ll ever need. Delicious, filling and completely satisfying.
Ingredients

- 2 Fluffy Protein Powder Waffles or 2 Savory Paleo Waffles
- 2 slices of uncured applewood smoked bacon (you can use more if you want)
- 2 large lettuce leaves
- 2–3 slices of tomato
- 1–2 tbsp Paleo Mayo
- 1/4 avocado, sliced (optional, but nice)
Instructions
- You want to start with room temperature bacon, so allow it to sit on the counter for a few minutes before you start cooking it.
- Preheat cast iron skillet by placing it under medium heat for about 5 minutes. Lay bacon strips on skillet and cook both sides until crispy. Remove bacon from skillet and place it on top of paper towel to remove excess fat.
- Build your BLT. Spread Paleo Mayo on waffles. Place one waffle (mayo side up) at the bottom of a plate and add the following ingredients to your waffle in this order: one lettuce leaf, one tomato slice, avocados, bacon strips, one tomato slice, and one lettuce leaf. Cover BLT with another waffle (mayo side down). Voila. Dig right in.
