These Paleo Protein Brownies are equally delicious and equally good for you. A nice boost of protein and great nutrients to keep you energized and satiated.

For the brownies
- 1/2 cup cashew meal
- 1/2 cup coconut flour
- 1/3 cup unsweetened cacao powder
- 1/2 cup [http://alterrations.com/product/alter-whey-isolate/]Alter Whey Protein Isolate (this is an unsweetened protein powder), or preferred protein powder
- 1 tsp baking powder
- 1/3 cup melted coconut oil
- 1/2 cup sweet potatoes, cooked, peeled and mashed
- 3 eggs
- 1/4 cup maple syrup
- 1/4 cup carton unsweetened coconut milk
- 1/4 cup dark chocolate mini chips
For the chocolate topping
- 1/3 cup dark chocolate mini chips
Instructions
- Make the brownies: preheat oven to 325 F. Line a 8”x8” baking dish with parchment paper and set aside. Add all ingredients (except chocolate chips) to a food processor and process until smooth. Transfer batter to a bowl and fold in chocolate chips. Pour batter into baking dish, spreading it evenly, and bake for 35 minutes. Let cool completely and slice into 9 squares.
- Make the chocolate topping: melt chocolate chips in a double broiler and drizzle on top of brownies.
- Serve right away or store in a tight lid container in the refrigerator for up to 1 week.
