Description

These Paleo Power Balls are a delightful combination of nuts and coconut, with hints of vanilla and maple.


Ingredients

Units Scale
  • 1 cup cashew butter (homemade recipe here)
  • 1/4 cup blanched almond flour
  • 3 tbsp unsweetened shredded coconut
  • 3 tbsp dark chocolate chips or carob chips
  • 3 tbsp pure maple syrup
  • 1/2 tsp vanilla extract

Instructions

  1. Add all ingredients to a food processor and process for about 1 minute, or until all ingredients are well combined.
  2. Roll mixture into 1” -1 ½” balls; the mixture should yield 12. Set them on a plate.
  3. Serve them immediately or refrigerate for up to 1 week.
