These Paleo Power Balls are a delightful combination of nuts and coconut, with hints of vanilla and maple.

- 1 cup cashew butter (homemade recipe here)
- 1/4 cup blanched almond flour
- 3 tbsp unsweetened shredded coconut
- 3 tbsp dark chocolate chips or carob chips
- 3 tbsp pure maple syrup
- 1/2 tsp vanilla extract
Instructions
- Add all ingredients to a food processor and process for about 1 minute, or until all ingredients are well combined.
- Roll mixture into 1” -1 ½” balls; the mixture should yield 12. Set them on a plate.
- Serve them immediately or refrigerate for up to 1 week.
