For the Sea Bass
- 2 lbs. sea bass cut into squares
- Juice of 2 oranges
- Juice of 2 limes
- 5 garlic cloves
- 1 tsp ground cumin
- 2 packets of Coriander & Annatto Sazon Goya Seasoning
For the Coconut Sauce
- 2 tbsp extra virgin olive oil
- 1 medium white onion, finely chopped
- 1 yellow bell pepper, finely chopped
- 1 orange bell pepper, finely chopped
- 2 large tomatoes, finely chopped
- 1 can full fat coconut milk
- 1 tsp tapioca flour
- 4 tbsp finely chopped cilantro
- Sea salt to taste
Instructions
- Mix orange juice, lime juice, garlic, cumin and Sazon Goya Seasoning in a bowl. Add in sea bass, cover and refrigerate for 2 hours.
- Heat olive oil in a skillet over medium heat; add in onions, tomatoes, peppers and salt, and cook for about 5 minutes. Mix in coconut milk and tapioca flour and let cook for another 10 minutes.
- Drain sea bass marinade, and add the fish to the skillet. Cook for about 20 minutes.
- Remove from heat, sprinkle chopped cilantro, squeeze lime juice if desired and serve right away.
