For the Sea Bass

For the Coconut Sauce

  • 2 tbsp extra virgin olive oil
  • 1 medium white onion, finely chopped
  • 1 yellow bell pepper, finely chopped
  • 1 orange bell pepper, finely chopped
  • 2 large tomatoes, finely chopped
  • 1 can full fat coconut milk
  • 1 tsp tapioca flour
  • 4 tbsp finely chopped cilantro
  • Sea salt to taste

Instructions

  1. Mix orange juice, lime juice, garlic, cumin and Sazon Goya Seasoning in a bowl. Add in sea bass, cover and refrigerate for 2 hours.
  2. Heat olive oil in a skillet over medium heat; add in onions, tomatoes, peppers and salt, and cook for about 5 minutes. Mix in coconut milk and tapioca flour and let cook for another 10 minutes.
  3. Drain sea bass marinade, and add the fish to the skillet. Cook for about 20 minutes.
  4. Remove from heat, sprinkle chopped cilantro, squeeze lime juice if desired and serve right away.
