Description

These Paleo Curry Meatballs are a great protein source, that’s also packed with great flavor.


Ingredients

Units Scale

For the meatballs

  • 1 lb organic ground beef
  • 2 eggs
  • 1/2 finely chopped medium yellow onion
  • 1 finely chopped garlic clove
  • 2/3 cup almond flour
  • 3 tbsp curry powder
  • 1/2 tsp ground ginger
  • 1/2 tsp sea salt
  • 1/2 tsp freshly ground black pepper
  • 1/8 tsp cinnamon
  • 2 tbsp coconut oil, for frying

For the sauce

  • 1 can of full fat canned coconut milk
  • 1 cup of organic chicken broth
  • 1/2 finely chopped medium yellow onion
  • 23 tbsp curry powder
  • 1 tsp of ginger
  • 1/2 tsp of cayenne pepper

Instructions

  1. In a mixing bowl, combine meatball ingredients, except for the coconut oil. Form 1″ meatballs and place them on a plate.
  2. Place skillet over medium heat and add coconut oil. Add in all the meatballs and the yellow onion from the sauce. Cook each side of the meatballs for about 4-5 minutes.
  3. While meatballs brown, whisk your sauce ingredients in a bowl and set aside.
  4. When meatballs have browned, add in the sauce and cover with a lid. Let simmer for about 5 minutes, until meatballs have cooked through and sauce thickens. Serve right away.
