Paleo Curry Meatballs, yum. These are seriously incredible. You guys know how much I love protein and how often I eat it (every 2-3 hours, every day), so this recipe will most definitely be added to my “weekly protein-must-haves”. Don’t be afraid to use all the curry powder this recipe calls for, I know it is a lot, but you wont regret it. Be brave.
Sorry I have not been posting as frequently as I used to. I got a new job two weeks ago and things have been way busier than expected. It’s a full time position, but I still get to work from home, so I’ll try my best to dedicate every little break I get to Amazing Paleo. Paleo Curry Meatballs

Description
These Paleo Curry Meatballs are a great protein source, that’s also packed with great flavor.
Ingredients
For the meatballs
- 1 lb organic ground beef
- 2 eggs
- 1/2 finely chopped medium yellow onion
- 1 finely chopped garlic clove
- 2/3 cup almond flour
- 3 tbsp curry powder
- 1/2 tsp ground ginger
- 1/2 tsp sea salt
- 1/2 tsp freshly ground black pepper
- 1/8 tsp cinnamon
- 2 tbsp coconut oil, for frying
For the sauce
- 1 can of full fat canned coconut milk
- 1 cup of organic chicken broth
- 1/2 finely chopped medium yellow onion
- 2–3 tbsp curry powder
- 1 tsp of ginger
- 1/2 tsp of cayenne pepper
Instructions
- In a mixing bowl, combine meatball ingredients, except for the coconut oil. Form 1″ meatballs and place them on a plate.
- Place skillet over medium heat and add coconut oil. Add in all the meatballs and the yellow onion from the sauce. Cook each side of the meatballs for about 4-5 minutes.
- While meatballs brown, whisk your sauce ingredients in a bowl and set aside.
- When meatballs have browned, add in the sauce and cover with a lid. Let simmer for about 5 minutes, until meatballs have cooked through and sauce thickens. Serve right away.

Not trying to be a jerk, but these aren’t completely dairy free if you’re using eggs.
This is a misconception and it usually results from a confusion between the terms “dairy product” and “animal byproduct”. While eggs are indeed produced by animals, and therefore and animal byproduct, they are not a dairy product or a derivative of dairy products.

Loved the flavor but the sauce was way too thin. Next time I will reduce the chicken broth by 1/2

My sauce turns out thick, so I wonder what happened! Did you use canned coconut milk or boxed coconut milk? This recipe calls for canned (full fat) coconut milk, which is way thicker than boxed coconut milk…and definitely plays a role on the thickness of the sauce. Perhaps that’s what went wrong?
