These Paleo Chocolate Chip Waffles are wonderful for weekend breakfast or brunch. Healthy, decadent and nutritious, a great recipe for the whole family.

- 1 1/2 cups almond flour
- 1/2 cup unsweetened shredded coconut
- 2 tbsp unsweetened cocoa powder
- 1 tsp baking soda
- 1/2 tsp cinnamon
- 1/4 tsp sea salt
- 1/2 cup full fat canned coconut milk
- 2 eggs
- 1 tbsp maple syrup
- 1/2 tsp vanilla extract
- 3 tbsp dark chocolate chips
Instructions
- In a large bowl, combine almond flour, cacao powder, shredded coconut, baking soda, cinnamon and salt. Set aside.
- In a separate bowl, whisk eggs, coconut milk, vanilla extract and maple syrup; pour over dry ingredients, and mix until no lumps remain. Fold in chocolate chips.
- Cook per waffle maker instructions. Batter should yield 4 waffles, so divide accordingly.
- Serve right away with favorite toppings, or refrigerate for up to 4 days.
