My husband and I celebrated our 3-year anniversary yesterday. It was so romantic and sweet. I feel so blessed to have married my best friend.

To start our day, I surprised him with a fun little breakfast treat that I knew he’d fully enjoy. It was superhero themed (as he is a total nerd and has loved all things superhero since he was three years old) and healthily-delicious. You know you got a winning breakfast combo when you serve treats that are fun to eat and a good for you too.

I found these cute superhero muffin liners at Williams Sonoma last year; I am not sure if they still carry them, but I do know they have a cool Star Wars collection you can own today.

Description

These Paleo Blueberry Banana Muffins are soft, sweet and comforting. Wonderful with a glass of almond milk, with tea or a cup of coffee.


Ingredients

Units Scale
  • 1 1/2 cups cashews
  • 1 cup almond flour
  • 3 bananas
  • 1 tbsp avocado oil
  • 2 eggs
  • 1 tbsp honey
  • 1/4 tsp vanilla extract
  • 1/2 cup blueberries
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1/2 tsp cinnamon
  • 1/4 tsp sea salt

Instructions

  1. Preheat oven to 375 F. Line a muffin pan with 12 muffin liners and set aside.
  2. To a food processor, add cashews, almond meal, baking soda, baking powder, cinnamon, sea salt, avocado oil, bananas, eggs, honey and vanilla, and process until smooth. Transfer to a bowl and fold in blueberries.
  3. Distribute the batter evenly between the 12 muffin liners, and bake for 35-40 minutes. Let cool a bit and enjoy right away, or refrigerate for later consumption for up to 1 week.
