Healthy and sweet, these Paleo Apple Raisin Muffins are nourishing little bundles of joy that are sure to brighten your morning.


Ingredients

  • 1 1/2 cups almond flour
  • 3 tbsp coconut flour
  • 1 tbsp cinnamon
  • 1/2 tsp baking soda
  • 1/4 tsp sea salt
  • 1 apple, grated
  • 3 eggs
  • 3 tbsp melted coconut oil
  • 2 tbsp maple syrup
  • 2 tbsp unsweetened almond milk
  • 1 tsp vanilla extract
  • 1/4 cup raisins

Instructions

  1. Preheat oven to 350 F. Line a muffin pan with 10 muffin liners and set aside.
  2. Mix almond flour, coconut flour, cinnamon, baking soda and sea salt in a large bowl. Set aside.
  3. In a separate bowl, whisk eggs, melted coconut oil, maple syrup, almond milk and vanilla extract. Pour over bowl with dry ingredients and mix until no lumps remain. Fold in grated apple and raisins, and divide batter evenly between the 10 muffin liners and bake for 30 minutes. Let cool a bit and enjoy right away or refrigerate for later consumption for up to 1 week.
