Let me introduce you to my oh-so-delicious Nutty Coconut Energy Balls! They are one of my favorite snacks for when the clock hits that 4 o’clock mark and I need a little something to keep my energy up, my blood sugar from dropping and my metabolism going. These cuties give me a boost, fill me up, curb my cravings and 100% hit the spot.
I make them in advance and keep them my freezer, so that I am well stocked for when I need to grab one (or two). When I see about 2-3 left, I make some more and place them right in the freezer. My honey loves to eat these two, so I feel like I am making energy balls non-stop.
I’ll also enjoy these as a post-workout snack when I’m feeling like my body needs a healthy fat intake. These are a great source of protein and fat; consuming protein and fats will keep us satiated for longer periods of time, compared to consuming carbs, and will also give us sustained energy (hence the snack’s name).
There’s something about a compact little snacker, that melts in your mouth and tastes like heaven, that gives me all of the feels.
Also, they are very easy to make and take no time to prepare. All you need is to dedicate 10 minutes of your day, and you’ll be left with 9 delicious snacks that will give you energy and nourishment.

These Nutty Collagen Energy Balls take less than 10 minutes to make and are made ingredients that will give you great energy and nutrition. 100% Paleo too.
Ingredients
- 1 cup shredded coconut
- 1/4 cup sunflower seeds
- 1/4 cup pepitas
- 1/2 cup raw cashews
- 1/2 cup raw pecans
- 1/4 cup unflavored collagen peptides
- 3 medjool dates, pitted
- 1/2 cup melted coconut oil
- 1/4 cup coconut butter
Instructions
- Add all ingredients to a food processor and process until a dough consistency is reached. Roll into small sized balls and lay them on a flat dish. Cover dish and freeze. Allow energy balls to thaw for ~5 minutes prior to serving for best results.
