One of the absolute best ways of using old and spotty bananas is to make Banana Raspberry NiceCream. You thought I was gonna say “banana bread” didn’t you? That was so last year; the new hot thing is “NiceCream” — so be sure to jump on the bandwagon.

Most of us seem to “collect” spotty bananas on our kitchen counters as if they were our preferred interior design accent. Ha! The thing is, that bananas are one of those fruits families buy a lot of — they are cheap, easy and convenient to eat, nutritious, super delicious, and go well with lots of breakfast dishes — and even though we try to eat them on time and at their prime, sometimes we sort of fail at the task…ending up with a few uneaten spotty ones. But hey, no need to fret! I have the perfect solution for you.

Banana Raspberry NiceCream

This is what you need to do with your old, uneaten bananas:

  1. Remove the spotty banana’s peel.
  2. Break the banana in half.
  3. Place the banana in a Ziploc bag.
  4. Place the Ziploc bag with the banana(s) in the freezer.

Boom. Just like that, you’ve salvaged your fruit. And you’ve also accomplished a very important task: you’ve prepared your freezer for some awesome future NiceCream.

Banana Raspberry NiceCream

NiceCream is one of the healthiest treats available as its done solely from frozen fruit. You can always jazz it up by:

  • changing the kinds of frozen fruits you use (bananas, mangoes, pineapple, berries, etc.)
  • adding a few extra fun ingredients in (nut butters, honey, vanilla extract, cacao powder, etc.)
  • topping it off with your ingredients of choice (dried fruits, nuts, seeds, coconut, carob/chocolate chips, etc.)

You can customize your NiceCream as you wish, so be sure to release your inner chef when you prepare yourself this treat to create your own edible masterpiece. You and your family will have so much fun preparing this healthy dessert at home. It is so easy, so convenient, so good for you, so tasty. Just to give you an idea of the way I like to eat mine, I have typed up a little recipe for you below.

Description

This delicious Banana Raspberry NiceCream recipe is made with simple, whole foods. A healthy and good-for-you version of ice cream that is naturally Paleo, gluten-free and dairy-free.


Ingredients

Units Scale
  • 2 bananas, sliced and frozen
  • 1/3 cup frozen raspberries
  • 1/4 tsp vanilla extract
  • 2 tbsp honey
  • Toppings: seeds, nuts, dried fruits

Instructions

  1. Add bananas, raspberries, vanilla extract and honey to a food processor and process until smooth and creamy.
  2. Scoop into a favorite ice cream bowl and add toppings of choice.
