These Mini Paleo Fudge Cups are the perfect size to satiate a chocolate craving.

- 1/2 cup coconut oil
- 1/2 cup cashew butter (homemade recipe here)
- 1/2 cup cacao powder
- 1/4 cup maple syrup
Instructions
- Double layer mini muffin liners in a large plate. Set aside.
- Add coconut oil, cashew butter and maple syrup to food processor, and process until smooth. Add in cacao powder; mix it with a spatula first, so the powder doesn’t get everywhere when the food processor starts running. Process for ~2 minutes or until ingredients are well combined.
- Use a teaspoon to scoop mixture from processor, transferring it to the muffin liners and filling each to the top. Freeze for 1 hour and enjoy.
