Mini Paleo Banana Bread Loaves with Chocolate Chips and Honey
Description
This Mini Paleo Banana Bread Loaves with Chocolate Chips and Honey recipe is absolutely fantastic and very easy to make. A delicious Paleo bread that is naturally gluten-free and dairy free, and that you can have for breakfast or in the afternoon.
Ingredients
- 2 cups walnuts
- 2 tbsp walnut oil
- 1 cup almond flour
- 2 ripe bananas
- 2 eggs
- 1 tbsp honey
- 1 tsp baking soda
- 1 tsp baking powder
- 1 tsp vanilla extract
- 1 tsp cinnamon
- 1/4 tsp sea salt
- Coconut oil spray
- Dark chocolate chips, to garnish
- Honey, to garnish
Instructions
- Preheat oven to 375 F.
- Grease three 3 ¼“ mini bread pans and set aside.
- Combine the almond flour, baking soda, baking powder, cinnamon and salt in a large bowl, and set aside.
- Place walnuts in a food processor and start processing. Add in walnut oil as nuts are being processed, and once these have mixed in, stop processing and add in bananas, eggs, honey and vanilla, and process again until well combined. Pour mixture into bowl with dry ingredients, and combine until no lumps remain.
- Evenly distribute batter between the three mini bread pans, and bake for 30-40 minutes or until a toothpick comes out clean when inserted.
- Let cool completely and refrigerate for 2+ hours, as this yields for better slicing.
- After slicing, sprinkle each loaf with chocolate chips and drizzle some honey on top.
