This Lemon Banana Paleo Bread is moist, healthy and completely delicious. Easy to make, and 100% Paleo approved.

- 2 cups almond flour
- 2 tsp baking soda
- 2 tsp cinnamon
- 1/2 tsp sea salt
- 1/4 tsp ground cloves
- 2 ripe bananas, mashed
- 2 eggs
- 1/4 cup honey
- 1 tbsp fresh lemon juice
- Zest of 1/2 lemon
- Slivered almonds, to garnish
Instructions
- Preheat oven to 350 F.
- Grease two 3 ¼“ mini bread pans with coconut oil spray and set aside.
- Mix almond flour, baking soda, cinnamon, salt and ground cloves in a large bowl, and set aside.
- Whisk eggs, mashed bananas, honey, lemon juice and lemon zest in a separate bowl, and pour over dry ingredients. Mix until no lumps remain.
- Divide mixture equally between the two mini bread pans. sprinkle slivered almonds on top of each, and bake for 45 minutes or until a toothpick comes out clean when inserted.
- Let cool completely and refrigerate for 2+ hours, as this yields for better slicing.
