I am seriously obsessed with her coconut butters. Truly, I am. I eat those butters by the spoonful, eat them along with fruit (mostly bananas and berries), or use them as a key ingredient on some of my Paleo dessert recipes. A few of my Instagram followers wanted to know what recipes I’ve made with these, so I told them I would soon share some recipes that carry Nikki’s Coconut Butters on my blog. And today is that day. The recipe I am about to share with you guys is creamy, sweet, rich and crazy satisfying. It’s a cheesecake recipe, but this one (unlike what you’d get at a grocery store or restaurant) doesn’t have any dairy, grains, or any processed sugars. Instead, it’s made with the best raw and organic ingredients, which are nutrient-rich and anti-inflammatory. Gotta love Paleo eating. I absolutely love making my own Paleo foods and desserts, because not only do I get to prepare foods that I like and crave, but I get to control the ingredients that go into making my recipes. I get to choose the ingredients that my body reacts well too, as well as the quality of each of my ingredients. Two very important factors, that do make a difference in how you feel and look. My husband and I shared this Lavender Raw Cheesecake with some of our friends after dinner a few weeks ago, and we all devoured. We topped our cheesecake slices off with my Mixed Berry Jam and a few roasted cashew pieces (but my Strawberry Rhubarb Sauce would also be incredible on it). It was so good, that our friends asked to see the coconut butter that I used to make this cheesecake. I had four different flavors of Nikki’s Coconut Butters in my pantry, so I decided to bring them all out to the dinner table for them to see (not just the one that I used for this recipe, which was the Honey Pecan Pie one). And, even though we had already finished eating our dessert (and a large and satisfying dinner), we still managed to grab spoonfuls of that “butter magic”. They’re just too good to pass.
