As you have been able to tell by two of my most recent recipes, Paleo Chocolate Cake and Paleo Coconut Bread, I am sort of addicted to coconut. Yes, I admit it…its true. I’m in love with the fruit. Not that it’s very common here in Idaho or anything, but I find my ways of finding all sorts of organic coconut goodies.
Yesterday I was playing around in my kitchen and found some coconut flakes in my pantry. They are so good looking (not to mention good tasting) that they caught my eye immediately and I ended up wanting to make something out of them. Of course I opted for butter. I have never actually made fresh coconut butter before, so it was the perfect day to try. And oh-boy, I am glad I did.

Ingredients
- 2 cups unsweetened coconut flakes
Instructions
- Add coconut flakes to a food processor and process for 10-15 minutes total. Food processor will gradually become less noisy, to the point where you feel nothing is happening anymore. Don’t stop it. Allow it to process. If flakes get stuck on the side of the bowl, stop processing, scrape down the sides with a spatula and continue processing.
- Transfer coconut butter to a jar with a lid. No need to refrigerate.

Can I just say this was a UUUHHHmazing! Cost effective too! Love it!
One thing I do with coconut butter: slice strawberries in half and hull them, mix a little stevia (or sweetner of your choice) in the coconut butter, put coconut butter in the strawberry, top with toasted almond flour/crushed almonds…..just like cheesecake!

How long is it good for?
