I have another grilled chicken recipe for you — can you tell we are craving protein this week in our house?
Truth is, I bought a lot of wonderful organic chicken breasts at Whole Foods the other day, and I have been having way to much fun dressing them up with spices and sauces. I want to make a million marinades now. I’m obsessed.
Marinades just add so much to your protein dish; whether it’s a sweet marinade, a spicy marinade, an herb-infused marinade or an international-inspired marinade, these saucy creations can take your protein from bland to GREAT! They can convert, say, an otherwise boring piece of chicken breast to an exquisite piece of chicken breast…and to be completely honest, with little-to-no effort. All you need is a little planning and you’re golden. It is so worth it — especially if you want your family to adore the meal you’re about to share at home (and who doesn’t want that?)
This “little extra bit of planning” I talk about is not in the least challenging; you just need to follow these FOUR STEPS:
- Get all the required marinade ingredients
- Prepare your marinade
- Pour your marinade over your protein of choice
- Cover it up with plastic and place it in the fridge overnight
And just like that, the planning and prepping portion is complete.
Do this, and your family will thank you for that wonderful piece of chicken, fish, steak, pork, game meat you just fed them. Trust me.
I prepared this particular Garlic and Herbs Grilled Chicken recipe in that same fashion. I allowed my chicken to soak in all the wonderful flavors of the marinade overnight. The ingredients I used for the marinade were really fun and spicy, which creating an interesting Latin flavor (mmm, I love me some Latin flavor)! For it, I used fresh onions, garlic and spicy peppers, tomato paste, and some basic spices that I know you must have in your pantry already (garlic powder, Italian seasoning, sea salt and black pepper). Super easy and simple.
We accompanied this grilled chicken with a fresh garden salad (adding to it fresh organic strawberries and avocado slices, honey roasted pecans, balsamic vinegar, olive oil, and a dash of sea salt and freshly ground black pepper) and roasted yukon potatoes. Garlic and Herbs Grilled Chicken

This Garlic and Herbs Grilled Chicken recipe grilled and spiced to perfection. A wonderful Paleo, gluten free and dairy free easy recipe for the family.
Ingredients
- 4 organic chicken breasts
- 3 garlic cloves
- 1/2 purple onion
- 1 fresno pepper
- 1 tbsp tomato paste
- 3/4 cups water
- 2 tbsp grape seed oil
- 1 1/2 tbsp Italian seasoning
- 1 tsp garlic powder
- 1 tsp sea salt
- 1/2 tsp black pepper
Instructions
- Add all ingredients, except the chicken, to a food processor and process until smooth.
- Place chicken in a glass bowl, pour sauce over the chicken, cover with a lid and let marinade for 2+ hours.
- Grill chicken on medium-high for 8-10 minutes total, flipping the chicken breasts half way. Remove from grill, let cool a bit, slice and serve.
