This Egg White Scramble (With a Veggie & Protein Twist) makes for a wonderful morning start. Light and satisfying, and very nourishing.
Ingredients

- 4 egg whites (if you want to add the yolks, you can)
- 1/2 grilled chicken breast, cubed
- 1 white mushroom
- 1/2 zucchini
- 1/4 sweet pepper
- 1/4 avocado
- Pinch of sea salt
- Pinch of pepper
- Olive oil, for greasing
Instructions
- Add a skillet over medium heat and add olive oil. Cook mushrooms zucchini, pepper and chicken until golden and fragrant, about 3 minutes.
- Pour in egg whites and cook until eggs have reached desired consistency. Remove from heat, season with salt and pepper, serve and top with avocado slices.
