Description

This Egg White Scramble (With a Veggie & Protein Twist) makes for a wonderful morning start. Light and satisfying, and very nourishing.


Ingredients

Scale
  • 4 egg whites (if you want to add the yolks, you can)
  • 1/2 grilled chicken breast, cubed
  • 1 white mushroom
  • 1/2 zucchini
  • 1/4 sweet pepper
  • 1/4 avocado
  • Pinch of sea salt
  • Pinch of pepper
  • Olive oil, for greasing

Instructions

  1. Add a skillet over medium heat and add olive oil. Cook mushrooms zucchini, pepper and chicken until golden and fragrant, about 3 minutes.
  2. Pour in egg whites and cook until eggs have reached desired consistency. Remove from heat, season with salt and pepper, serve and top with avocado slices.
