- 3 cups unsweetened shredded coconut
- 5 tbsp coconut oil
- 1/2 cup xylitol, or preferred sweetener
- 2 tsp vanilla extract
- 3/8 tsp sea salt
Instructions
- Cover a baking sheet with parchment paper, and set aside.
- Place all ingredients in a food processor and process for about 3 minutes, until you get a moist batter. Grab ~2 tbsp of the batter and roll into a ball; add pressure, ensuring mixture sticks together, and place ball on the lined baking sheet. Repeat until mixture is gone. Refrigerate for 1 hour, and enjoy.
- No need to store in refrigerator; in fact, if you do, your Coconut Treats might get a bit too hard to eat.
