- 1 1/4 cups almond flour
- 3 tbsp coconut flour
- 2 tbsp coconut palm sugar
- 1 tbsp cinnamon
- 1/4 sea salt
- 1 egg white
- 1/3 cup honey
- 3 tbsp melted coconut oil
Instructions
- Preheat oven to 350 F. Line a baking sheet with parchment paper and set aside.
- Combine almond flour, coconut flour, coconut palm sugar, cinnamon and sea salt in a large bowl, and set aside.
- In a separate bowl, whisk egg white, honey and coconut oil. Pour in bowl with dry ingredients and mix until no lumps remain. Create small sized balls (about ½ inch each – the smaller you make them, the crunchier they will be) and place them on the baking sheet, leaving a bit of room between each so they don’t stick together when they bake.
- Bake for 17 minutes. Let cool and store in a tight container. Enjoy them with almond/coconut milk and fruit.
