These Coconut Cinnamon Sweet Potatoes make for a delightful side dish to accompany any protein and vegetable. They are lightly sweet, healthy and comforting.

- 3 long (yet skinnier) sweet potatoes
- Coconut oil spray
- Cinnamon, to taste
- Sea salt, to taste
Instructions
- Preheat your oven to 450 F.
- Cover your baking sheets with parchment paper and spray with coconut oil.
- Wash and pat dry sweet potatoes, and cut into 1/8 inch rounds.
- Spread sweet potatoes rounds on pans, making sure they don’t overlap.
- Spray coconut oil on every slice; sprinkle cinnamon and a bit of salt on top.
- Bake for 25-30 minutes, until potatoes are soft.
- Enjoy by themselves or with a favorite dip.
