- 2 lb ground chicken
- 2 egg yolks
- 1/2 cup Paleo almond flour
- 1/2 cup unsweetened shredded coconut
- 2 tsp onion powder
- 2 tsp garlic powder
- 1/2 tsp sea salt
- 1/2 tsp pepper
- 3 tbsp coconut oil, for frying
Instructions
- Combine all ingredients, except oil, in a mixing bowl and form 8 patties.
- To cook patties, place a skillet over medium heat and add 1.5 tbsp of coconut oil. Cook 4 patties at a time for a total of 10-12 minutes, flipping half way and covering the skillet with a lid. You want the patties to be crispy brown, but not burnt. Transfer patties to a large plate lined with a paper towel, so that the paper towel can absorb any excess oil.
- Repeat step 3 with remaining patties.
- Serve right away with preferred side dish.
