- 2 1/2 cups almond flour
- 2 tbsp coconut flour
- 2/3 cups unsweetened shredded coconut
- 1 tsp baking soda
- 1/2 cup coconut oil
- 1/4 cup melted honey
- 3 whisked eggs
- 1 tbsp vanilla extract
- 2/3 cup roasted macadamia nuts
- 2/3 cup dairy-free mini chocolate chips
- 1/4 tsp sea salt
Instructions
- Preheat oven to 350 F.
- Line 2 baking sheets with parchment paper, and set aside.
- Mix almond flour, coconut flour, shredded coconut, baking soda and salt in a large bowl, and set aside.
- In a large bowl, whisk eggs, coconut oil, honey and vanilla extract; pour over dry ingredients and mix well. Fold in macadamia nuts and chocolate chips.
- Grab ~2 tbsp of the batter and roll into a ball. Place on the lined baking sheet and flatten the ball with your hand to create a cookie shape. Repeat with the rest of the batter, and bake for 18-20 minutes. Check them at minute 16, to ensure they’re not burning. Let cool and enjoy.
