Description

The ultimate Chocolate Chip and Macadamia Nut Cookies. A dessert party featuring paleo-approved ingredients, that make a perfectly balanced and perfectly textured gluten free treat.


Ingredients

  • 2 1/2 cups almond flour
  • 2 tbsp coconut flour
  • 2/3 cups unsweetened shredded coconut
  • 1 tsp baking soda
  • 1/2 cup coconut oil
  • 1/4 cup melted honey
  • 3 whisked eggs
  • 1 tbsp vanilla extract
  • 2/3 cup roasted macadamia nuts
  • 2/3 cup dairy-free mini chocolate chips
  • 1/4 tsp sea salt

Instructions

  1. Preheat oven to 350 F.
  2. Line 2 baking sheets with parchment paper, and set aside.
  3. Mix almond flour, coconut flour, shredded coconut, baking soda and salt in a large bowl, and set aside.
  4. In a large bowl, whisk eggs, coconut oil, honey and vanilla extract; pour over dry ingredients and mix well. Fold in macadamia nuts and chocolate chips.
  5. Grab ~2 tbsp of the batter and roll into a ball. Place on the lined baking sheet and flatten the ball with your hand to create a cookie shape. Repeat with the rest of the batter, and bake for 18-20 minutes. Check them at minute 16, to ensure they’re not burning. Let cool and enjoy.
