- 2 cups gluten-free oats
- 3 bananas, ripe
- 1 large egg
- 1 flaxseed egg (1 tbsp flaxseed meal + 2.5 tbsp water)
- 12 medjool dates, pitted
- 1 tsp baking soda
- 1/4 tsp salt
- 1/4 tsp cinnamon
- 1/2 cup dark chocolate chips/chunks
Instructions
- Grease mini bread pans with coconut oil and set aside.
- Preheat oven to 350 F.
- Soak the dates in warm water for 10 minutes (this will soften them and help them blend easier).
- Prepare the flax seed egg: add flaxseed meal and water to a dish and stir. Let rest for 5 minutes to thicken.
- Let’s get the blending started. First blend your bananas to have a nice liquidy base to help the rest of the ingredients break down. Add in the pitted dates and blend until smooth. Add in the oats, baking soda, cinnamon and salt and blend until broken down. Lastly, add in the flax egg and the egg and blend until incorporated.
- Divide batter into the three mini bread pans pan and top each with dark chocolate morsels.
- Bake for 18-20 minutes, let cool and enjoy.
