Description

These Blueberry Cashew Waffles are fluffy, sweet and completely delicious. Make in less than 15 minutes, and add your favorite toppings.


Ingredients

  • 1 cup raw cashews
  • 3 tbsp coconut flour
  • 1 tsp baking soda
  • 1/4 tsp sea salt
  • 3 eggs
  • 1/2 cup unsweetened almond milk
  • 3 tbsp honey
  • 1/2 tsp vanilla extract
  • 4 tbsp coconut oil, melted
  • 1 cup fresh blueberries

Instructions

  1. Convert cashews into cashew flour in a food processor by pulsing until a floury consistency is reached. Set aside.
  2. Add eggs, almond milk, honey, vanilla extract and coconut oil to a high speed blender and blend until combined. Add in cashew flour, coconut flour, baking soda and salt, and blend on high to combine. Transfer to a large bowl and fold in blueberries.
  3. Pour mixture into a mixing bowl and fold in blueberries.
  4. Cook per waffle maker instructions. Batter should yield 5 waffles, so divide accordingly.
  5. Serve right away with favorite toppings, or refrigerate for up to 4 days.
