- 2 cups oats
- 3 bananas
- 2 eggs
- 1 cup pitted whole dates, soaked in warm water for 10 min (makes for easier blending)
- 1 tsp baking soda
- 1/4 tsp salt
- 1/4 tsp cinnamon
- Dried baby bananas cut into tiny slices, to top
- Pumpkin seeds, to top
- Sunflower seeds, to top
Instructions
- Preheat oven to 350 F.
- Grease a muffin pan.
- Mix all ingredients in a blender or food processor until smooth.
- Pour batter into muffin pan (you should have enough for 10-12 standard size muffins). Top with dried banana slices and seeds.
- Bake for 15-18 minutes, let cool and enjoy.
