I’ve been wanting to prepare stuffed burgers for a while now. I took a long time because I knew that if I was going to stuff my beef, I needed to stuff it with something worthwhile. I wanted to use two stuffing ingredients, ones that would compliment each other and when united, make our taste buds jump of joy. Then it hit me…bacon and pesto. The perfect two. Each can make a dish shine, so you can only imagine what happens when they are combined.
Here’s a visual depiction of how some steps of the recipe went down:
These burgers literally lasted a day in my household. Preston ate two and I ate two. Usually it’s more of a three-to-one ratio (hubby eating three and me eating one…which is totally fine, since he is a guy and way bigger than me), but this time I was not going to let that happen. I wanted my fair share.
We both literally ate ½ lb of beef + bacon + pesto in one sitting. Epic. I love how protein not only feels you up, but also helps your muscles grow strong. I’m a total meat lover…yes, guilty as charged. Say hello to these wonderful Paleo Bacon Pesto Stuffed Burgers.

- Total Time: 32 min
- Yield: 4 patties 1x
Description
These Bacon Pesto Stuffed Burgers are absolutely fantastic, especially when you’re craving some protein with lots of flavor. Paleo approved, naturally gluten-free and dairy-free.
Ingredients
- lb ground beef
- 4 tbsp of Paleo Pesto (read below for homemade)
- 5 strips of bacon, cooked and diced
- 1 tbsp Montreal Steak spice
Instructions
- Make patties. Set broiler on high, arranging rack so that patties are about 2″ from the heat.
- Mix ground beef and Montreal Steak spice in a bowl, and form 8 thin patties out of the mixture, setting them on a plate.
- Transfer 4 patties to a baking pan, aligning them on a straight line lengthwise in the middle; add 1 tbsp pesto and a few pieces of bacon on the middle of each patty; cover with remaining 4 patties and pinch the meat around the edges to keep the pesto and bacon stuffing inside.
- Broil for 12 minutes total, flipping patties half way. Serve right away with favorite condiments.
Notes
- I recommend topping each patty with a bit of Sriracha sauce…you know, to add some zing.
