Well balanced and full of flavor, this Baby Arugula Salad with Beets and Feta Cheese salad is a winning combo.
Ingredients

- 5 oz. baby arugula
- 4 cooked beets, sliced
- 1 granny smith apple, diced (tip: squeeze fresh lime juice on top to give it some zing and to keep it fresh)
- 5 tbsp feta cheese crumbles
- 5 tbsp of my Lemon Garlic Vinaigrette
- Candied pecans
- Optional: Arabian Inspired Grilled Chicken
Instructions
- Add vinaigrette ingredients to a bowl, and whisk well to emulsify. Set aside.
- Place arugula in a salad bowl, pour vinaigrette to taste and gently toss to coat. Add in beets, apple, feta cheese crumbles and candied pecans. Serve right away by itself or with sliced, grilled chicken.
