Description

This Apple and Curry Chicken Crockpot recipe is a delicious and convenient dinner that the whole family can enjoy.


Ingredients

Units Scale
  • 6 organic boneless chicken breasts
  • 3 sliced granny smith apples
  • 1 chopped white onion
  • 3 finely diced garlic cloves
  • 3 tbsp curry powder
  • 1/8 tsp ground nutmeg
  • 6 oz purified water
  • 4 drops liquid stevia, or 2 tbsp coconut sugar
  • 1/3 cup chicken broth
  • 2 tbsp apple cider vinegar
  • 1 tbsp coconut flour
  • Sea salt and black pepper to taste

Instructions

  1. Place onions in crockpot.
  2. In a large mixing bowl combine water, stevia, curry powder, ground nutmeg, salt and pepper. Add in chicken and toss to coat. Transfer chicken and marinade to crockpot, covering the onions. Cover crockpot and cook for 6 hours on LOW. Add in apples and let cook on LOW for another 40 minutes.
  3. In a bowl, whisk apple cider vinegar, chicken broth and coconut flour. Pour over chicken and cook on HIGH for 15 minutes. Sauce should become bubbly and thicken up a bit. Serve right away.
