Simple Grilled Chicken

I tend to eat grilled chicken breast whenever I want to feel like I’m having a lean/healthy meal. It’s my safety-net food item. When I’ve gotten out of line, eating way too many chocolate chips and nut butters, I turn to some fresh veggies and a nice piece of juicy chicken breast.

Start with chicken breasts on a baking pan. 
Simple Grilled ChickenAdd in salt and lemon & pepper spice to taste. Broil or grill those babies up.

That’s what’s happening today. I have come to realize I’ve been overdoing the chocolate chips, nuts, and healthy fats combo. And now it’s time for some healthy eating at the Lewis’ home. Today I’ve prepared a Simple Grilled Chicken recipe that I enjoy a lot. It’s easy to make and you can prepare it in bulk to enjoy it throughout the week.

  2. Were your chicken breasts frozen?? I tried this and followed the recipe exactly with defrosted chicken and the foil caught on fire right after I flipped them?

    1. Hi Nicole! My chicken was defrosted for sure. I’m sorry that happened to you, it’s never happened to me before and I make this “Simple Chicken” recipe every week. Maybe your baking sheet was too close to the flame? :/

  3. Huge problem I’m having now: I live in Middle of nowhere…there are no organic or free range anything. My family’s christmas turkey and chicken will be grain fed, skin on, roasted, …from a packed processing plant. I’m very…at odds with this…but if I don’t start eting the chicken in this location, I’m reduced to eggs and fish all. the . time. I’m lost.

    1. Hi Jill! That’s unfortunate. It’s ok for you to have non-organic food once in a while, specially if your body is craving chicken and all they have around is non-organic. Just be sure that the majority of your protein intake comes from an all natural, unprocessed meats. 🙂 Hang in there and get creative with how you use your fish and eggs! You’ll be amazed at all the different dishes you could make.

  4. I was looking for an easy chicken recipe for tonight. This was excellent! I think chicken breasts are normally difficult to grill because I always seem to overcook them. These turned out perfectly! Even my husband was impressed! Thanks for the recipe!
