Eating eggs every morning or every other morning can be a little repetitive, so one is bound to find creative ways to cook those little babies up. At my house we eat eggs a lot…we eat them with veggies, with avocado, with turkey, with beef, with bacon, with steak, with sweet potatoes…you name it. We try to make egg-eating, fun. We love eggs and there is no way that we’re going to let ourselves get tired of them. Bacon Wrapped Eggs

  2. I took a paper towel, with a little bit of coconut oil on it, to the inside of the muffin tin first. No messy, sticky eggs!!! They popped right out and clean up was really easy.

  3. The Bacon Wrapped Eggs were Delicious. They took 15+ min and like Sarah the bacon did not cook thru. In order to keep the bacon from overlapping, I cut about two inches off the bacon and placed it in the bottom of the muffin pan. Next time I will put the bacon in the muffin pan and put it in the oven without the egg for a while…then add the egg and bake for 12 minutes or so.

  4. Try some Pam in the muffin pan. I add some chopped veggies (peppers/onions/celery/spinach/mushrooms).Scramble the egg, then pour it in the pan. Cook for 30 minutes at 350.

I make a bunch of these once a week and refrigerate them. Eat a couple after weight workouts for a quick breakfast before going to work.
