Description

In this Paleo series I have 7 Paleo Thanksgiving Recipes (4 of 7) – Paleo Parsnip Mash is today’s recipe and it is an amazing substitute for your Thanksgiving mashed potatoes. Fluffy and full of flavor, you will be delighted with the results.


Ingredients

  • 4 medium parsnips, peeled and cubed
  • 1/2 white onion
  • 2 tbsp olive oil
  • 1/2 cup water
  • Sea salt and black pepper to taste

Instructions

  1. Place a skillet over medium heat, add in olive oil and cook onions until they start to caramelize, about 10 minutes.
  2. Add parsnips and water to the skillet; cover with a lid and cook until parsnips have softened.
  3. Transfer to a food processor and add in salt and pepper to taste. Process until parsnips have mashed. Serve right away.
