“God I trust You.” These are words I kept repeating to myself over and over again last Friday night. These brought strength and peace to my heart.

I got a very disturbing call; one that informed me my husband had been in an accident and was being taken in an ambulance to the Emergency Room. Those were probably the most heartbreaking news I have ever received in my life. I started shaking, my mind went blank, and I could not process outside information very well. The thought of losing my love, my best friend, was too much to bare. All I could do was pray. All that was left for me to do was put my trust in Him and ask Him for a miracle. I felt Him telling me it was all going to be ok; I felt peace. Peace no one would’ve been able to provide me. It is so important to know He is our refuge and strength. He is all we have. HE is all we need.

Preston (my husband) recovered pretty well. He hit his head pretty bad while snowboarding and ended up with a concussion. For those of you who have never had a loved one go through a concussion, it is pretty scary stuff…especially because concussions make you experience short-term memory loss. I balled every single time my husband asked me what had happened, or when he asked me again and again why he was in the ER. He thought he was 22 years old and that George W. Bush was the president of the United States.

It is so, so hard for a wife to see her man in such condition. Praise The Lord, he is perfectly fine today! He was sent home that same night and slept for a good 12 hours; he woke up fully recovered. I got my miracle. God provides you guys. He does! Trust in the Lord, with all your might.

In order to celebrate life and good health, I decided to spend some time baking treats this weekend. I am leaving you all with two things:

  1. Always keep God present in your life no matter what.
  2. Baked goods are a great way to bring extra (needed) smiles to life. Give it a try, by baking these delicious strawberry almond muffins!

Description

These Strawberry Almond Muffins are crazy delicious, and so good for you. Sweet strawberries with nutty undertones.


Ingredients

Units Scale

For the muffins

  • 2 cups almond flour
  • 1 1/2 tsp baking soda
  • 1/4 tsp sea salt
  • 4 eggs
  • 1/4 cup coconut oil
  • 1 tbsp vanilla extract
  • 8 medjool dates, pitted
  • 1 1/4 cup of sliced strawberries

For crumbles (to top muffins)

  • 1 tbsp coconut oil
  • 1/3 cup macadamia nuts
  • 1/3 cup walnuts
  • 2 tbsp coconut sugar

Instructions

  1. Preheat oven to 350 F. Line a muffin pan with muffin liners and set aside.
  2. Prepare the “crumbly top”: add all ingredients to a food processor and pulse until you get a crumb-like consistency. Transfer crumbles to a bowl and set aside.
  3. Make the muffins: mix almond flour, baking soda and sea salt in a large bowl, and set aside. In a food processor, process eggs, dates, vanilla extract and coconut oil until smooth; pour into bowl with dry ingredients and mix until no limps remain. Fold in strawberries, and divide batter evenly between the 12 muffin liners. Top each with the “crumbly top” and bake for 25 minutes.
  4. Let cool a bit and enjoy right away or refrigerate for later consumption for up to 1 week.

  1. Hi. I am totally new to the eating real foods/ slightly on the paleo bandwagon. I have noticed there is a TON of fat in a lot of paleo recipes. Is this healthy? I’m sorry if this is obvious to most, but I truly just don’t know. Thanks!! 🙂

  2. I made these muffins this weekend because my husband was tiring of the ones I’ve been making every week for 4 months now. They are delicious! Definitely will be on our treat menu for the forseeable future. Doubly great because I can introduce them to my parents while they’re in town this weekend.

    1. Hi Shelley! I am so glad you love it! So do I! 🙂 Coconut flour bakes very differently than almond flour, so it wouldn’t work for this recipe. However, you could sub the almond flour with other nut flours…walnut, cashew, pecan, or even macadamia nut!
